Pumpkin Spice Doughnuts

I love fall. Mostly because I love pumpkin flavored items. Here’s one i’ve been wanting to try for a while… Pumpkin spiced doughnuts. They are airy and don’t feel heavy like our neighborhood doughnut store. The pumpkin flavor really comes through in this recipe and the spiced sugar is the icing sprinkles on the cake doughnut. 

1 3/4C - Flour

2t - baking powder

1/2t - salt

1/2t - ground cinnamon

1/4t - ginger powder

1/4t- baking soda

1/8t - nutmeg

1 small pinch- ground cloves

1/2c - sugar

1 1/2T - vegetable shortening

1- egg

1 egg yolk

1/2t - vanilla bean paste

1/4c - buttermilk at room temprature

7oz- canned pumpkin puree 

Canola oil (for deep-frying)

Spiced Sugar-

1/2C- sugar

1t- pumpkin pie spice

Mix all ingredients together in a bowl, set aside.


Whisk flour, baking powder, salt, cinnamon, ground ginger, banking soda, nutmeg, and ground cloves in medium bowl to blend. 

Using a mixer, beat sugar and shortening in bowl until blended. Beat in egg, then yolks and vanilla bean paste. 

Gradually beat in buttermilk; beat in pumpkin in 2 batches. 

Using rubber spatula, fold in dry ingredients in 2 batches, blending gently after each addition. Cover with plastic; chill in the freezer for 15 minutes. (express method… If you have time chill in the fridge for 3 hours)

Press out dough on a lightly floured surface to 1/2-inch thickness. Using 2 1/2-inch-diameter round cutter, cut out rounds. Arrange on sheets. Gather dough scraps, and repeat process. 

Using 1-inch-diameter round cutter, cut out center of each dough round to make the holes in your doughnuts, and get doughnut holes. 

Prepare a cooling rack with a baking sheet below it to catch any excess oil or sugar.

Pour canola oil into large deep skillet to depth of 1 1/2 inches. Use a fry thermometer to maintain your oil temperature between 365°F to 370°F. 

Fry doughnut holes until golden brown, turning occasionally, about 2 minutes. Using a slotted spoon, transfer to the bowl with spiced sugar, roll around and transfer to cooling rack.

Fry doughnuts, 2 at a time, until golden brown, about 2 minutes per side. 

Using slotted spoon, transfer doughnuts to the cooling rack and immediately sprinkle with spiced sugar.

Allow to cool and enjoy. :)
